Unfussy Rugelach and Yummy Butter Pecan Cookies
Kim Roberts, our West Coast Regional Director, has some amazing memories of her mom making these Yummy Butter Pecan Cookies. We hope you’ll enjoy them as much as she does!
Makes 5 dozen
Ingredients:
1 lb (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
1 Tablespoon vanilla extract
1/2 cup pecans
Directions:
1. Soften butter and mix with sugar and vanilla
2. Slowly mix in the flour, then the pecans
3. Shape into small balls or “fingers”
4. Bake 15-20 minutes at 350 degrees Fahrenheit
5. Roll in powdered sugar when cool
